This is Carlos Fernández Morera’s 65th season growing coffee in San Rafael de San Ramón. His family has been growing coffee here since 1895.

Elevation ~ about 1200 meters above sea level
Region ~ San Rafael de San Ramón, Costa Rica
Process ~ Fully washed and anaerobically fermenting. Dried in the sun on a patio and raised beds.

Hario Switch ~ 15 grams of beans with a medium grind and 240 grams of water at 200F or 93c.
Recipe & Process ~ First pour 80 grams of water for a 40-second hold with an easy stir, then 4 pours with 40 grams of water on hold for the pour and a stir on the last pour.
Taste surprising cinnamon flavors going down, as the brew cools there’s a toasted grain like oats or barley on the tip of the tongue and a tasty sweet spice finish.
After Thoughts ~ At the end, the grind bed was a little muddy maybe a courser grind next time. Not sure if a stronger cup like a Moka pot would work with these beans. I’ll stick with a pour-over for now.
